Margherita cake recipe

Today we have prepared a fantastic cake, for simplicity and taste. The Margherita cake is extremely easy to make. It is one of the most popular cakes in Italy and was named after the country’s first queen: Margherita di Savoia.

Very soft and easy Margherita cake recipe by ItalianCakes


4 eggs and 7 egg yolks
8,8 oz (250 gr) of caster sugar
1 berry of vanilla
4,4 oz (125 gr) of flour
4,4 oz (125 gr) of potato starch
2,6 oz (75 gr) of butter


Beat the eggs with granulated sugar at high speed. Meanwhile, incise a vanilla bean and extract all the seeds. Add the seeds of vanilla to the whipped sugar and eggs.

Incorporate the flour and potato starch, after having sifted, into three portions, stirring gently with a spoon or a spatula with circular movements from bottom to top.

Finally add the melted butter warmed and mix briefly.

Pour into a 25 cm diameter mold, having coated the bottom with baking paper, buttered and floured. Bake in a preheated oven at 350°F (175°C) for about 40 minutes.
