The cannoli are traditional Sicilian sweets. Initially prepared for the carnival, today they are prepared throughout the year and are the symbol of Sicilian pastry.

300g flour 00
30g of sugar
a pinch of salt
150ml dry Marsala
1 kg of cottage cheese or mixed
300g of icing sugar
200g dark chocolate
We mix all the ingredients of the dough before using a spatula and then by hand. If the dough is too soft add a little flour until it becomes very hard.
Roll out the dough onto a lightly floured work surface until obtaining a height of approximately 1-2 millimeters. With a pasta cup of 10 cm in diameter go derive circles.
Using the metallic special accessory for cannoli, we are going to fold the pasting paste with albumen.
Fry in hot vegetable oil for frying. We check the oil temperature by dipping a small piece of dough. When it begins to fry in the bustling so we can dip the cannoli in oil. Bake until golden brown.
Prepare the cream by mixing the ricotta, icing sugar, vanilla, dark chocolate and rum. We mix the ingredients the time necessary to mix well.
We bring the cream into a piping bag and insert it into the cannoli.
We add candied cherries to decorate and serve.
